Teriyaki Chicken Noodle Stir-Fry with Bok Choy

This stir-fry is quick and packed with so much flavour. Juicy udon noodles, coated in layers of rich and sticky teriyaki sauce, and fresh veg is gently charred at a high heat, to maintain maximum crunch and gain maximum flavour. Ginger seasoned chicken ties it all together.
Ingredients
Stir-Fry
- 1 baby bok choy, leaves separated
- 1 carrot, cut in half & thinly sliced
- 1 broccoli, cut into small florets
- 1 drizzle of oil
- 1 pack udon noodles
- 100g teriyaki sauce
- 1/4 cup water
Chicken
- 1 Tbsp ginger, minced
- 300g free range chicken breast, sliced 1cm
- 1 drizzle of oil

Separate bok choy leaves and cut any larger leaves in half lengthways. Cut carrot in half and thinly slice. Cut broccoli into small florets. Set aside separately.

Mince ginger. Pat chicken dry. Slice 1cm and add to a bowl. Mix chicken with ginger. Season with salt and pepper.

Heat oil in a frypan on high. Cook chicken for 3-4 mins, until golden and just cooked through. Transfer to a heatproof bowl and cover to keep warm.

Return pan to high heat with oil. Cook carrot and broccoli for about 5 mins, until starting to soften. Reduce heat to medium-high. Add noodles, cooked chicken and bok choy and toss to combine. Add teriyaki sauce and water measure and cook for about 2 mins, until sauce has thickened slightly and noodles are hot through.
