Greek Beef Gyro Bowls with Skinny Fries and Carrot Hummus

Arranging your skinny fries in a single layer will mean they cook up nice and crispy. Use two trays if needed.


Ingredients

Skinny Fries

  • 600g potatoes, scrubbed and cut into 0.5cm fries
  • 2 teaspoons Greek spice mix

Greek Beef

  • ½ brown onion, finely diced
  • 1 carrot, grated
  • ¼ teaspoon salt
  • 450g beef mince
  • 1 tablespoon Greek spice mix
  • ¼ cup GF stock (e.g. beef, chicken, veggie)
  • 2 tablespoons GF tomato sauce
  • 1 teaspoon GF soy sauce
  • ½ bag baby spinach

Salad

  • 1 capsicum
  • 1 tomato
  • ½ iceberg lettuce
  • 1-2 teaspoons GF vinegar (e.g. red wine, white wine, apple cider)

To Serve

  • 150g carrot hummus

Steps

  1. Preheat oven to 220°C. Line a large oven tray with baking paper. Prepare your skinny fries. Toss potatoes with a drizzle of oil and first measure of Greek spice mix on prepared tray and season with salt. Arrange in a single layer and roast for 25 minutes, until golden and cooked through. Turn once during cooking.
  2. While potatoes are cooking, prepare the rest of the meal. Heat a drizzle of oil in a large fry-pan on medium-high heat. Cook onion, carrot and salt for about 3 minutes, until softened. Add beef mince and Greek spice mix and cook a further 4-5 minutes, breaking up meat with a spoon, until browned.
  3. Stir through stock, tomato sauce and soy sauce. Cook a further 3 minutes, stirring, until cooked through and most of the liquid has evaporated. Roughly chop spinach and stir through then remove from heat. Season to taste, if needed.
  4. While beef is cooking, thinly slice capsicum; dice tomato 1cm; thinly slice lettuce. Arrange all salad ingredients on a platter and drizzle with vinegar and a little olive oil. Alternatively, combine all salad ingredients with vinegar and a little olive oil in a large bowl. Season to taste.
  5. To serve, arrange skinny fries, Greek beef and salad in a bowl. Top with a dollop of carrot hummus.
