Coconut Poached Chicken with Vermicelli Noodles

Be sure to keep leftover poaching liquid. It can be frozen and used for a base to a laksa or Thai red curry.
Ingredients
Coconut-Poached Chicken
- 1 can coconut milk
- ¼ cup water
- Zest of 1 lime
- 1 tablespoon coriander leaves, roughly chopped
- 1 teaspoon salt
- 1 teaspoon fish sauce
- 150g chicken breast
Vermicelli Noodles
- 50g vermicelli noodles
- ½ Lebanese cucumber
- 1/3 bag baby spinach
- ½ courgette
- 2 tablespoons coriander leaves, roughly chopped
- Juice of 1 lime
- 1 teaspoon fish sauce
To Serve
- 1 tablespoon coconut thread
- 1 tablespoon crispy shallots

Bring a half-full kettle to the boil. Pat chicken dry. Place all coconut-poached chicken ingredients in a small pot and bring to the boil. As soon as it boils, reduce temperature to low and gently simmer for 1 minute. Cover, turn off heat and leave for 17 minutes. The residual heat will cook chicken through. Reserve ½ cup of cooking liquid for salad.

While chicken cooks, place noodles in a heat-proof bowl and cover with boiling water. Use a fork to separate strands, leave for 5 minutes then drain. Use scissors to cut noodles in a few places.

While noodles cook, heat a small, dry pan on medium heat. Add coconut thread and crispy shallots, cook for about 1 minute until coconut is toasted and brown. Take care not to burn. Set aside and allow to cool.

Dice cucumber 1cm, roughly chop spinach and grate courgette. Add to a medium bowl, along with coriander, lime juice, fish sauce, vermicelli noodles and reserved cooking liquid. Season to taste.

Slice chicken thinly against the grain.

To serve, place vermicelli noodles in a bowl and top with coconut poached chicken. Sprinkle over coconut thread and crispy shallots.
