Bacon, Maple and Caramelised Onion Pizzas with Chilli Slaw

Take your time to really caramelise the onions, low and slow – that’s the key!


Ingredients

Bacon, Maple and Caramelised Onion Pizzas

  • 2 brown onions, thinly sliced
  • 1 tablespoon maple syrup
  • 1 tablespoon balsamic vinegar
  • 70g tomato paste
  • 3 tablespoons sweet chilli sauce
  • 1 tablespoon olive oil
  • 3 pizza bases
  • 250g bacon, diced 1.5cm
  • 1 apple, diced 1cm
  • 1½ cups grated tasty cheese
  • 1 pottle yoghurt

Chilli Slaw

  • ¼ cabbage
  • 1 carrot
  • 100g green beans
  • ½ chilli, thinly sliced (optional)
  • 2 tablespoons chopped coriander leaves and stalks
  • 3 tablespoons mayonnaise

Steps

  1. Preheat oven to 220°C. Preheat two oven trays (or pizza stones if you have them). Heat a drizzle of oil in a medium fry-pan on medium heat. Cook onions with a pinch of salt for about 8 minutes, until browned and very soft. Stir through maple syrup and vinegar until sticky, about 1 minute. In a small bowl, mix together tomato paste, sweet chilli sauce and olive oil.
  2. Cut one pizza base in half, lay two sheets of baking paper on a bench or flat surface and place one and a half pizza bases on top. Evenly spread tomato mixture over the bases. Scatter bacon, apple and caramelised onions between pizzas and sprinkle with cheese. Season.
  3. Lift paper up with pizzas on top and place one and a half pizzas on each preheated tray. Then carefully slide baking paper away (use a fish slice to help with this). Cook pizzas for 12-14 minutes, until the bases are crisp and golden around the edges. Swap trays halfway to ensure even cooking.
  4. While pizzas cook, prepare the chilli slaw. Thinly slice cabbage until your have about 4 cups worth; grate carrot; thinly slice green beans on an angle; thinly slice chilli (if using).
  5. Mix coriander and mayonnaise together in a large bowl and combine with remaining all chilli slaw ingredients. Season to taste.
  6. To serve, cut each bacon, maple and caramelised pizza into 6-8 wedges and drizzle with yoghurt. Serve with chilli slaw to the side.
