  • 1 avocado
  • ¼ cup mayonnaise

To Serve

  • 6 burger buns

  • 2 Tear lettuce leaves into smaller pieces; thinly slice tomato; grate second measure of carrot; crumble feta and set aside on a platter. Cut avocado in half length ways and twist halves to separate. Remove stone using a spoon, scoop out flesh and place into a bowl. Mash using a fork and season to taste.
  • 3 Heat a drizzle of oil in a large fry-pan on medium-high heat and cook patties, in two batches, for 2 -3 minutes each side until golden and cooked through. Wipe out pan between batches and add another drizzle of oil as needed.
  • 4 While patties are cooking, slice buns in half horizontally and place cut-side-up on prepared tray. Warm in oven for 4-5 minutes until lightly toasted and warmed through.
  • 5 To serve, place everything in the middle of the table for everyone to help themselves. Place a patty onto the base of each bun and top with feta, a dollop of tomato relish or tomato sauce (for kids), lettuce, tomato, and carrot. Spread mayo and avocado on top half of bun. Serve remaining salad on the side.
