Beef Sirloin with South American Sautéed Greens

Alternatively, use BBQ to cook beef. Cook for about 2 minutes each side then bake in oven (below fries) for 5-6 minutes for medium-rare (depending on thickness) or until cooked to your liking.
Ingredients
Steak Fries and Beef Sirloin
- 400g potatoes, scrubbed
- 1 teaspoon South American blend
- 300g beef sirloin (at room temperature)
- ½ teaspoon South American blend
South American Sauce
- 3 teaspoons South American salsa
- 3 tablespoons mayonnaise
South American Sautéed Greens
- 150g asparagus spears
- 75g snow peas
- ½ bag baby spinach
- Remaining South American salsa

Preheat oven to 220°C. Line an oven tray with baking paper. Set aside a small baking tray or oven-proof fry-pan. Preheat BBQ hot plate or grill to high (if using). Cut potatoes into 1cm fries and toss on prepared tray with a drizzle of oil and first measure of South American blend. Season and bake in oven for about 30 minutes, turning once, until tender and golden.

Pat beef dry, season with salt, and coat in second measure of South American blend and set aside to marinate. In a small bowl, combine South American sauce ingredients. Season and set aside.

When steak fries have 15 minutes remaining, heat a drizzle of oil in a medium fry-pan on medium-high heat and cook beef for about 2 minutes each side, until golden.

Transfer beef to prepared tray/oven-proof pan (reserve cooking pan) and bake in oven (below fries) for 5-6 minutes for medium-rare (depending on thickness) or until cooked to your liking. Set aside, covered, to rest for 3-4 minutes then slice thinly against the grain.

Wipe reserved pan clean and return to mediumhigh heat with a drizzle of oil. Cook asparagus for 1-2 minutes until tender. Add snow peas and cook a further 1 minute. Remove from heat, add spinach and remaining South American salsa, fold through and season.

To serve, divide South American sautéed greens between plates and top with slices of beef sirloin. Dollop over South American sauce to taste and serve steak fries on the side.
