Family-Style Beef Nachos with Corn Chips and Sweet Chilli Sour Cream

If you don’t have an oven-proof pan, transfer beef mixture to a large casserole dish then top with cheese before grilling. Or simply sprinkle on at the end to serve.
Ingredients
Family-Style Beef Nachos
- 450g beef mince
- 4 teaspoons nacho seasoning
- 1 can mild chilli beans
- 1 cup GF beef stock
- 70g tomato paste
- 2 courgettes, grated
- 2 carrots, peeled and grated
- 1 teaspoon salt
- 1 cup grated cheese
- 2 tomatoes
To Serve
- ½ cup sour cream
- 2 teaspoons GF sweet chilli sauce (optional, adults)
- 1½-2 bags corn chips

Preheat oven to high grill. Heat a drizzle of oil in a large, oven-proof fry-pan on medium-high heat. Cook beef, breaking up with a wooden spoon, for about 4 minutes, or until just cooked. Add nacho seasoning and cook a further 1 minute, until fragrant.

Reduce heat to low and add chilli beans, stock, tomato paste, courgette, carrots and salt. Leave to simmer for 13-15 minutes, stirring occasionally.

While mince and beans simmer, dice tomatoes 1cm. Mix sour cream with sweet chilli sauce (if using) in a small bowl, or keep plain. Set all aside.

Sprinkle beef mixture with cheese and place in oven for 1-2 minutes, or until cheese has melted. Top with diced tomatoes.

To serve, spoon nacho mixture onto plates and serve with a handful of chips. Dollop over a little sweet chilli sour cream.
