Chicken Red Rice Nasi Goreng

Ingredients

RED RICE AND VEGETABLES

  • 50g red rice
  • 125g frozen peas
  • ½ pack broccolini, florets and stalk roughly diced 1-2cm
  • 1 courgette, cut in half lengthways and thinly sliced

OMELETTE

  • 1 egg
  • 1 teaspoon soy sauce
  • ½ teaspoon oil, for cooking (or use spray oil)

CHICKEN NASI GORENG

  • 250g chicken breast stir-fry
  • ¼ red onion, thinly sliced
  • 40g nasi goreng paste
  • ¼ teaspoon salt
  • ½ teaspoon sesame oil
  • 1 teaspoon kecap manis
  • Juice of ¼ lemon

TO SERVE

  • 25g mung bean sprouts
  • 2 teaspoons kecap manis
  • ¼ lemon, cut into wedges

Steps

  1. Bring a medium pot of salted water to the boil. Prepare your vegetables. Cook red rice in pot of boiling water on high heat for about 25 minutes. Add peas, broccolini and courgette in last 2-3 minutes of cook time. Rice should be tender. Drain well.
  2. While rice is cooking, prepare the rest of the meal. In a small bowl, whisk together egg and soy sauce.
  3. Heat oil in a medium, non-stick fry-pan on medium heat. Add egg, slightly scramble using a wooden spoon then let set as an omelette. Cook for 2-3 minutes, or until set. Remove from pan and set aside on a board. Reserve pan.
  4. Place chicken in a medium bowl with onion, nasi goreng paste and salt and toss to coat well. When rice has about 3 minutes cook time remaining, heat sesame oil in reserved pan on medium-high heat. Stir-fry chicken for 2-3 minutes, until just cooked through.
  5. Reduce heat to low and add drained rice and vegetables to pan with chicken. Stir through first measure of kecap manis and lemon juice. Season to taste. Thinly slice omelette.
  6. TO SERVE spoon chicken red rice nasi goreng onto plates. Top with sliced omelette, mung bean sprouts, a little kecap manis and a squeeze of lemon juice.
