Pre-Prepped Pork Belly Ramen with Udon Noodles & Mushrooms

Create an easy and truly delicious pork ramen with all the hard work done for you. Succulent slices of sous-vide pork belly are served in a savoury dashi broth with veggies and tender udon noodles.
Ingredients
Broth & Veggies
- 500g dashi broth
- 1/2 can corn, drained
- 100g mushrooms, thinly sliced
- 1/2 tsp sesame oil
- 1 cup water
- 1/2 pack vegetable stock powder
- 1/4 pack udon noodles
- 50g baby spinach
Pork
- 350g free farmed sous vide pork belly, diced 2cm
To Serve
- 1/2 tsp sesame oil
- 1 pinch of chilli flakes
Steps

Place dashi broth in a heatproof bowl and heat in microwave for 2-3 minutes, until warm.

Drain corn and thinly slice mushrooms. Add both to a pot (with a lid), along with first measure of sesame oil. Cook on high heat for 2 minutes. Add warmed broth, water measure and measure of stock powder to pot, cover with lid to bring to the boil.

Pat dry pork dry and dice 2cm. Heat a dry frypan on high heat. Add pork to pan and cook for about 6 minutes, until hot and crispy. Set aside.

As soon as broth boils, add noodles and cook for 3-4 minutes, until noodles are tender. Remove broth from heat and stir through spinach.

Divide ramen between bowls and top with pork, second measure of sesame oil and chilli flakes.
