Turn garlic bread often to ensure it doesn’t burn.

Ingredients

Hickory Smoked Beef Steak

  • 500g beef sirloin steaks (at room temperature)
  • 2 teaspoons BBQ hickory salt
  • 6 pork and herb sausages

Smoky Corn

  • 1 tablespoon olive oil
  • 1 teaspoon corn spice mix
  • 4 corn cobs, peeled

Garlic Bread

  • 2 garlic breads

Salad

  • 2 tomatoes
  • ½ bag baby spinach
  • Drizzle of olive oil
  • Drizzle of vinegar

Steps

  1. Preheat BBQ hot plate to medium and grill to high. Pat beef dry, rub with BBQ hickory salt and a drizzle of oil. Season with pepper and set aside.
  2. Combine all smoky corn ingredients in a medium bowl. Wrap garlic bread in foil. Dice tomatoes 1cm and place in a medium bowl along with spinach. Set all aside.
  3. Cook sausages, on hot plate, for about 8 minutes, or until cooked through, turning to ensure even cooking. Cook hickory smoked beef, on grill, for about 3 minutes each side for medium-rare (depending on thickness), or until cooked to your liking. Set both aside to rest.
  4. While sausages and beef cook, place corn on hot plate and cook for about 10 minutes, until tender and golden. Turn often to ensure even cooking. Place garlic bread, on grill and cook for about 5 minutes, until heated through. Turn often to avoid burning.
  5. Slice beef thinly against the grain. Add olive oil and vinegar to bowl with salad and toss to combine.
  6. To serve, divide hickory beef steak, sausages, smoky corn, salad and garlic bread between plates.
