Sumac Pistachio Lamb with Couscous and Date Dressing

Cook lamb on the BBQ for about 2 minutes each side depending on thickness for medium-rare or until cooked to your liking.
Ingredients
Couscous
- 1/3 cup chicken stock
- 1 teaspoon From My Kitchen Sumac Pistachio Blend
- ½ cob corn, kernels removed
- Drizzle of olive oil
- ¼ cup couscous
- ½ carrot, grated
Sumac Pistachio Lamb
- ½ bunch green beans
- 150g lamb rump steak (at room temperature)
- 2 teaspoons From My Kitchen Sumac Pistachio Blend
To Serve
- ½ orange, peeled and cut into segments
- 1-2 tablespoons date and mustard dressing
- 1 tablespoon roughly chopped mint leaves
- 1-2 teaspoons sliced almonds

Bring a half kettle to the boil. Preheat BBQ grill or hot plate to medium-high (if using). Prepare vegetables. Add stock, first measure of Sumac Pistachio Blend, corn and olive oil to a small pot. Bring to the boil on high heat. Turn off heat, add couscous, stir, cover and leave for 5 minutes, then fluff up grains with a fork.

Place beans in a heat-proof bowl and cover with boiling water. Cover with a plate and leave for 5 minutes, or until bright green and tender. Drain and return to pot, with a drizzle of olive oil. Cover to keep warm.

Pat lamb dry and place onto a plate. Coat with second measure of Sumac Pistachio Blend and a drizzle of oil.

Heat a drizzle of oil in a medium fry-pan on mediumhigh heat. Cook lamb for about 2 minutes each side for medium-rare (depending on thickness), or until cooked to your liking. Set aside to rest, covered, for a few minutes.

Stir carrot through couscous and season. Thinly slice lamb against the grain.

To serve, spoon couscous onto a plate and top with sumac pistachio lamb, orange and a drizzle of date dressing. Sprinkle over mint leaves and almonds, and serve beans on the side.
