Beef Pasta Bolognese with Parmesan & Basil

Our delightful twist on a traditional Italian favourite will have you romanticising over steamy plates of Bolognese sauce. Packed full of goodness, this beefy meal is balanced with carrot ribbons and pulse pasta.
Ingredients
Bolognese
- 200g mushrooms, grated
- 1/2 tsp oil
- 250g lean beef mince
- 1/2 pack aromatic Italian spices
- 1/2 tsp cornflour
- 25g tomato paste
- 200g tomato passata
- 1/3 cup water
- 1/4 tsp salt
Penne
- 1 carrot, peeled into ribbons
- 1/3 pack pulse penne pasta
- 50g baby spinach
To Serve
- 2 Tbsp grated Parmesan
- 1/2 bunch basil

Bring a large pot of salted water to the boil.

Grate mushrooms. Heat oil in a large frypan on medium-high heat. Cook mushrooms for about 3 minutes, until softened. Add beef and cook for 4-5 minutes, until starting to brown. Add measure of spices, cornflour and tomato paste and cook for about 1 minute, until fragrant.

Add tomato passata, water and salt measure to pan and cook for about 5 minutes, until thickened. Season to taste with salt and pepper.

Peel carrot into ribbons. Cook pasta in pot of boiling water for 6-8 minutes, until tender. Add carrot and spinach to pot, drain and season to taste with salt and pepper.

Plate pasta topped with Bolognese, Parmesan and basil leaves.
