15-Minute Ponzu Chicken with Sesame Edamame

Ingredients
Chicken
- 1 tsp sesame oil
- 800g diced free range chicken breast
- 50g lime ponzu
Edamame
- 1 tsp sesame oil
- 1 pack edamame beans
- 1 pack sesame seeds
- 1 twin pack baby bok choy, leaves separated
- 1 Tbsp soy sauce
To Serve
- 1 bunch coriander, leaves picked
- 300g sliced cabbage
- 100g sesame mayo

Heat sesame oil in a frypan on high heat. Pat chicken dry and add to pan. Cook for about 8 minutes, tossing occasionally, until cooked through. Remove from heat and stir through lime ponzu. Season to taste with salt and pepper.

Heat sesame oil in a second frypan on high heat. Add edamame and sesame seeds and cook for an initial 3 minutes. Separate bok choy leaves. Add to edamame and cook for an additional 2 minutes, until tender. Stir through soy sauce.

Pile edamame into bowls with cabbage and chicken. Dollop over sesame mayo and sprinkle with coriander.
