Marinated Beef Steaks with Smashed Potatoes

Keep some potatoes plain for less adventurous eaters. Serve the spinach and feta on the side.


Ingredients

Marinated Beef Steaks

  • 550g beef sirloin steaks (at room temperature)
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons brown sugar
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • 2 teaspoons Dijon mustard
  • ½ teaspoon salt

Smashed Potatoes

  • 600g potatoes, diced 2cm
  • 75g baby spinach, roughly chopped
  • 150g feta cheese, crumbled
  • 2 tablespoons milk

Bean Salad

  • 1 cup frozen peas
  • 100g green beans, ends trimmed and thinly sliced
  • 50g feta cheese, crumbled (optional, adults)

Steps

  1. Preheat BBQ grill or hot plate to medium-high (if using). Bring a medium pot of salted water to the boil. Bring a small pot of salted water to the boil. Prepare veggies and feta cheese. Pat beef dry. Mix all remaining marinated beef steak ingredients together in a medium, shallow dish, add beef and toss to coat. Set aside to marinate while you prepare the rest of the meal.
  2. Cook potatoes in medium pot of boiling water for 10- 12 minutes, until tender. Drain well and return to pot.
  3. While potatoes cook, heat a drizzle of oil in a large fry-pan (or use BBQ) on medium-high heat. Cook beef for about 2 minutes each side for medium-rare (depending on thickness), or until cooked to your liking. Set aside, covered, to rest for 5 minutes, before slicing thinly against the grain, reserving resting juices.
  4. Add peas and beans to small pot of boiling water and cook for 2 minutes, until bright green and just tender then drain.
  5. Add spinach, first measure of feta and milk to potatoes and use a fork to roughly crush. Season with black pepper. Add remaining feta to peas and beans (if using), or keep plain for kids.
  6. To serve, divide smashed potatoes between plates, top with marinated beef steak and pour over any resting juices, if desired. Serve bean salad on the side.
