
Bok Choy Slaw with Beef Sirloin and Ponzu

Alternatively, cook beef on BBQ grill. Cook for 1-2 minutes each side (depending on thickness) for medium-rare, or cooked to your liking.
Ingredients
Ponzu Dressing
- 100g ponzu sauce
- Juice of 1 lemon
- 2 tablespoons sweet chilli sauce
- ¼ teaspoon sesame oil
- 1 makrut lime leaf, thinly sliced
- ¼ teaspoon chilli flakes (optional)
Bok Choy Slaw with Beef Sirloin
- 100g vermicelli noodles
- 300g beef sirloin steak (at room temperature)
- 1 clove garlic, minced
- 2 teaspoons sesame seeds
- 1 baby cabbage, shredded until you have about 1½ cups
- 1 baby bok choy, end removed, thinly sliced
- ½ telegraph cucumber, peeled into ribbons
To Serve
- 2 tablespoons picked coriander leaves
- 1 teaspoon sesame seeds

Prepare vegetables. Bring a half-full kettle to the boil. Preheat BBQ grill to high (if using). Line an oven tray with baking paper. Combine all ponzu dressing ingredients in a small bowl, season and set aside.

Place vermicelli noodles in a large, heat-proof bowl and cover with boiling water. Use a fork to separate strands and leave to steam for about 2 minutes. Drain and cool under cold water, then leave to drain well.

Pat beef dry and season. Drizzle with oil and coat in garlic and first measure of sesame seeds. Heat a dry, medium fry-pan on medium-high heat. Cook beef for 1-2 minutes each side for medium rare (depending on thickness) or until cooked to your liking.

When beef is cooked, rest for about 2 minutes before slicing thinly against the grain.

While beef rests, prepare bok choy slaw. Place drained noodles into a bowl along with cabbage, bok choy and cucumber. Pour ponzu dressing over slaw and noodles, season and toss well.

To serve, divide bok choy slaw and noodles between plates and top with slices of beef. Sprinkle over coriander and sesame seeds.
