A refreshing Asian-style noodle dish featuring NZ beef mince seasoned with garlic paste and a sweet and savoury yakisoba sauce. Paired with a zesty broccoli noodle salad for balance, this is a healthy dish that you can whip up in just 15 minutes!
Ingredients
Noodles
- 1 broccoli, finely chopped
- 1/2 pack soba noodles
- 350g slaw
- 1 Tbsp soy sauce
- 1 Tbsp vinegar
- 2 tsp sesame oil
Beef
- 2 tsp sesame oil
- 20g garlic paste
- 500g lean beef mince
- 100g yakisoba sauce
- 1 pinch of chilli flakes
To Serve
- 2 spring onion, thinly sliced
- 3 baby turnip, grated
- 1 bunch mint

Bring a pot of water to the boil.

Finely chop broccoli. Cook broccoli and noodles in pot of boiling water for about 4 minutes, until tender. Drain well and return to pot. Set aside.

Heat sesame oil in a frypan on high heat. Add garlic paste and beef. Cook for about 5 minutes, breaking up beef as it cooks, until browned. Add yakisoba sauce and chilli flakes. Cook for 1 minute to heat through. Remove from heat. Season to taste with salt and pepper and keep warm.

Thinly slice spring onion. Grate baby turnip (S2 & S4 only).

Add slaw, soy sauce, vinegar and sesame oil to pot with cooked noodles. Toss to combine.

Portion noodles into bowls and top with beef. Garnish with spring onion, turnip (S2 & S4 only) and mint leaves.
