Italian Bolognese is one of the most popular Italian dishes for good reason! Here we use prime NZ beef mince simmered in a rich tomato sauce, for an unrivalled depth of flavour. Garlic cream and cheese add the perfect touch to elevate this dish to a whole new level.
Ingredients
Bolognese
- 1 brown onion, finely diced
- 1/2 carrot, grated
- 1 drizzle of oil
- 300g beef mince
- 1 pack Italian spice blend
- 30g tomato paste
- 1/2 can crushed tomatoes
- 1/4 cup water
- 1/2 tsp balsamic vinegar
- 1/4 tsp salt
- 50g baby spinach
Pasta
- 1/2 pack fettuccine
- 1 drizzle of oil
To Serve
- 1 tomato, diced
- 25g grated Parmesan
- 50g garlic cream
Steps
-
Bring a pot of salted water to the boil.
-
Finely dice onion and grate carrot. Heat oil in a frypan on high heat. Cook beef mince for about 5 minutes, breaking up with a spoon as it cooks, until browned. Add onion, carrot and measure of spices and cook for 3-4 minutes, until carrot is tender.
-
Add tomato paste, canned tomatoes, water measure, balsamic vinegar and salt measure to pan. Reduce heat to medium and simmer for 6-7 minutes, stirring occasionally, until sauce has thickened. Fold through spinach to wilt and season to taste with pepper.
-
Add pasta to pot of boiling water and cook for about 12 minutes, until just tender. Stir occasionally to ensure strands don’t stick together. Drain and return to pot with oil to prevent sticking. Dice tomato and set aside.
-
Twirl pasta onto plates and top with Bolognese and tomato. Sprinkle over Parmesan and dollop on garlic cream.
