Ready Made Beef Stroganoff with Pumpkin Crush

Hearty yet healthy (with less than 450 calories per serve), this slow cooked beef and mushroom stroganoff is packed with nutrients and flavour!


Ingredients

Pumpkin Crush

  • 400g diced pumpkin

Stroganoff

  • 1 Ready Made Beef Stroganoff

Broccoli

  • 1 broccoli, cut into small florets

Steps

  1. Bring a pot of salted water to the boil.
  2. Add pumpkin to a pot and cover with hot water and a pinch of salt. Cook on high heat for about 15 minutes, until very tender. Drain, return to pot with a pinch of salt and crush with a fork or masher.
  3. Transfer meal to a pot. Heat on medium-high heat, covered, for 10-15 minutes, stirring occasionally, until piping hot and simmering. Season to taste if needed.
  4. Cut broccoli into small florets and cook in pot of boiling salted water for about 3 minutes, until tender. Drain well and return to pot.
  5. Spoon pumpkin crush and ready made meal onto plates and serve broccoli alongside.
