Hearty yet healthy (with less than 450 calories per serve), this slow cooked beef and mushroom stroganoff is packed with nutrients and flavour!
Ingredients
Pumpkin Crush
- 400g diced pumpkin
Stroganoff
- 1 Ready Made Beef Stroganoff
Broccoli
- 1 broccoli, cut into small florets
Steps

Bring a pot of salted water to the boil.

Add pumpkin to a pot and cover with hot water and a pinch of salt. Cook on high heat for about 15 minutes, until very tender. Drain, return to pot with a pinch of salt and crush with a fork or masher.

Transfer meal to a pot. Heat on medium-high heat, covered, for 10-15 minutes, stirring occasionally, until piping hot and simmering. Season to taste if needed.

Cut broccoli into small florets and cook in pot of boiling salted water for about 3 minutes, until tender. Drain well and return to pot.

Spoon pumpkin crush and ready made meal onto plates and serve broccoli alongside.
