Seared Beef Satay

With Nutty Super Slaw


Ingredients

NUTTY DRESSING

  • 2 tablespoons chopped peanuts
  • 50g slaw dressing
  • 1 clove garlic, minced
  • 1 teaspoon finely grated ginger

SUPER SLAW

  • 1 baby cabbage
  • ¼ red onion
  • 1 courgette
  • ½ carrot
  • ½ capsicum
  • 1-2 tablespoons mint
  • ½ Lebanese cucumber
  • ¼ teaspoon honey
  • Pinch of chilli flakes (optional)

SEARED SATAY BEEF

  • 1½ teaspoons oil, for cooking (or use spray oil)
  • 275g Taupo beef stir-fry steak (at room temperature)
  • ¼ red onion
  • ½ teaspoon oil, for cooking (or use spray oil)
  • 1 tablespoon water
  • ½ sachet peanut butter
  • ¼ cup lite coconut milk

Steps

  1. Preheat BBQ grill or hot plate to high (if using). Prepare garlic and ginger. In a small bowl, mix all nutty dressing ingredients together and set aside.
  2. Very thinly slice cabbage until you have about 3 cups worth; very thinly slice red onion; grate courgette and carrot; thinly slice capsicum; finely chop mint; cut cucumber in half lengthways and thinly slice on an angle. Place all in a medium bowl, along with ¾ of the nutty dressing, honey and chilli flakes (if using). Toss well to combine and season to taste.
  3. Heat oil in a large fry-pan on high heat until very hot. Pat beef dry, season and cook for about 1 minute each side, or until just cooked. Set aside, covered, to rest. Wipe out pan and return to medium heat. Alternatively, cook beef on BBQ and use pot for satay sauce.
  4. Thinly slice red onion and add to pan, along with oil and a pinch of salt. Cook for 2-3 minutes, stirring often, until starting to caramelise. Remove pan from heat, add water and allow to evaporate. Add reserved nutty dressing, peanut butter and coconut milk and stir until combined. Set aside.
  5. Thinly slice beef and add, along with 2-3 teaspoons of resting juices (if desired), to satay sauce. Stir through and season to taste.
  6. TO SERVE divide super slaw between bowls. Top with satay beef and drizzle over sauce.
