Balanced Moroccan-Style Beef with Dates & Yoghurt

Our Balanced meals are packed with goodness and hero protein, vegetables and wholesome carbohydrates. Brown beef before simmering with dates, tomatoes and a special blend of spices for this healthy take on a Moroccan beef tagine. Serve it together with nutty bulgur wheat and drizzle of yoghurt.
Ingredients
Bulgur
- 450g bulgur wheat
- 4 1/2 cup boiling water
Tagine
- 1 brown onion, thinly sliced
- 2 carrot, grated
- 1 capsicum, diced
- 3 garlic clove, minced (optional)
- 1 drizzle of oil
- 900g beef mince
- 3 pack Middle Eastern spice blend
- 1 tsp salt
- 2 can crushed tomatoes
- 1 pack chopped dates
- 1/2 cup beef stock
- 100g baby spinach
To Serve
- 200g yoghurt

Boil the kettle. Add bulgur and boiling water measure to a pot and bring to a simmer. Cover with a lid, drop heat to low and cook for 10 mins. Take off heat, leave lid on and steam for 10 mins. There should be no liquid and the grains will be tender. Fluff grains with a fork and season to taste with salt and pepper.

Thinly slice onion. Grate carrot. Dice capsicum. Mince garlic (if using). Set aside separately.

Heat oil in a frypan on medium-high. Cook onion, carrot, capsicum and garlic (if using) for 3-4 mins, until softened. Add beef, measure of spices and salt measure and continue to cook for about 5 mins, until browned.

Add canned tomatoes, dates and stock to pan and bring to a simmer. Drop heat to medium and simmer for 7-8 mins, until slightly reduced. Season to taste with salt and pepper. Stir through spinach until wilted.

Spoon bulgur into bowls and top with beef. Dollop with yoghurt and enjoy!
