Ingredients

Beef Pie Filling

  • 1 brown onion, diced 2cm
  • 1 capsicum, diced 2cm
  • 1 1/2 carrot, grated
  • 1 tsp oil
  • 500g lean beef mince
  • 1 pack smoky Mexican spices
  • 60g tomato paste
  • 1 can crushed tomatoes
  • 1 tsp salt
  • 1 1/2 Tbsp honey
  • 2 Tbsp apple cider vinegar
  • 1 Tbsp cornflour
  • 100g baby spinach

Tortilla Lattice

  • 1/2 pack wheatmeal tortillas (4 pack), sliced 2cm
  • 50g Colby cheese, grated
  • 1 pinch of chilli flakes
  • 4 Tbsp sour cream

Steps

  1. Preheat oven to high grill. If you don't have an ovenproof frypan, set aside a baking dish.
  2. Dice onion and capsicum 2cm and grate carrot. Heat oil in an ovenproof frypan on medium-high heat. Cook onions and carrot for 2-3 minutes, until softened. Add beef and cook for 7-8 minutes, breaking up, until browned. Add measure of spices and cook for about 1 minute, until fragrant. Add tomato paste, chopped tomatoes, capsicum, salt measure and honey to pan, stirring well to combine.
  3. Mix vinegar and cornflour together in a bowl to make a paste. Add cornflour mixture to pan and stir through well. Cook beef filling for 3-4 minutes, until thickened. Add spinach to pan and stir through, until wilted. Season to taste with salt and pepper and transfer to baking dish (if using).
  4. While filling cooks, slice tortillas into 2cm strips. When beef pie filling is ready, lay tortilla strips over beef to form a lattice pattern. Grate cheese. Sprinkle cheese and chilli flakes over top of tortilla lattice and grill for 3-5 minutes, until cheese has melted and tortilla is crispy.
  5. Using a serving spoon, divide cheesy tortilla beef pie between plates and dollop with sour cream.
