One-Pot Spicy Buffalo Chicken Chilli with Corn Chips

Spice up your dinner routine with our one-pot Buffalo chicken chili, packed with fiery Buffalo flavour and topped with crunchy corn chips. It's comfort food with a kick!
Ingredients
Chilli
- 1 brown onion, finely diced
 - 200g celery sticks, finely diced
 - 2 carrot, grated
 - 600g free range chicken thighs, diced
 - 1 drizzle of oil
 - 1 Tbsp cornflour
 - 1/2 tsp salt
 - 1 pack Southern spice blend
 - 1 can mild chilli beans
 - 1 can crushed tomatoes
 - 1 cup chicken stock
 - 100g Buffalo wing sauce, see tip
 
To Serve
- 300g corn chips
 - 125g sour cream
 - 1 bunch coriander, torn
 
Steps
- 
                  Finely dice onion and celery. Grate carrot. Pat chicken dry and dice.
 - 
                  Heat oil in a pot (with a lid) on medium-high. Add onion, celery, carrot, chicken, cornflour, salt measure and measure of spices. Cook for 5-6 minutes, tossing occasionally, until veggies are tender. Add the remaining chilli ingredients (except Buffalo sauce) and cook, covered, for 10-12 minutes, stirring occasionally.

                  Stir in Buffalo sauce and season to taste with salt and pepper.

                  Bowl up chilli and serve with corn chips and a dollop of sour cream. Tear over coriander.
