10-Minute Sweet Chilli Chicken with Udon Noodles & Crispy Shallots

Quick, easy and unbelievably delicious, these sticky chicken noodles are ready in only 10 minutes! Udon noodles, broccoli and spicy-sweet chicken are tossed with creamy sesame dressing and come together with crispy shallots for the best-ever speedy noodle dish.
Ingredients
Chicken
- 1 drizzle of oil
- 600g diced free range chicken breast
- 2 tsp soy sauce
- 150g mild sweet chilli sauce
Noodles
- 2 broccoli, cut into small florets
- 400g udon noodles
- 200g julienned carrot
- 1 creamy roasted sesame dressing
To Serve
- 200g creamy roasted sesame dressing
- 1 pack crispy shallots

Bring a pot (with a lid) of salted water to the boil.

Heat oil in a frypan on medium-high heat. Pat chicken dry and add to pan along with soy sauce. Cook for about 6 minutes, tossing occasionally, until cooked through. Add sweet chilli sauce to pan and cook for 1 minute, until sticky.

Cut broccoli into small florets. Place noodles, broccoli and carrot (S2 & S4 only) in pot of boiling water. Stir to separate noodle strands, cover with lid and cook for 3-4 minutes, until noodles and veggies are tender. Drain and return to pot with first measure of sesame dressing.

Plate up noodles and veggies. Top with chicken and drizzle over remaining sesame dressing. Sprinkle over crispy shallots.
