
Baked Salmon & Middle Eastern Zhoug Sauce with Crispy Potatoes

Zhoug is a Middle Eastern sauce that has its origins in Yemeni cuisine. Made with coriander, green chilli, lemon, cumin and cardamom this vibrant green sauce pairs excellently with oven-baked salmon and crispy smashed potatoes. Blast frozen, sustainably sourced NZ salmon is provided for this recipe.
Ingredients
Potatoes
- 400g baby potatoes, cut in half
- 1 drizzle of olive oil
- 1 drizzle of olive oil
Cumin Tomato Sauce
- 1 garlic clove, minced
- 50g baby spinach, roughly chopped
- 1 drizzle of olive oil
- 1 tsp cumin seeds
- 1 can crushed tomatoes
- 1/2 Tbsp brown sugar
- 1/2 tsp salt
- 1/2 lemon, zested
Salmon
- 300g NZ salmon fillet
To Serve
- 1/2 lemon, cut into wedges
- 50g zhoug
Steps

Preheat oven to 230°C (or 210°C fan bake).

Cut potatoes in half and toss on a lined oven tray with olive oil. Season with salt and pepper and bake for about 25 minutes, until tender.

Mince garlic and roughly chop spinach. Heat olive oil in a frypan on medium-high heat. Cook garlic and measure of spices for about 1 minute, until fragrant. Add canned tomatoes, sugar and salt measure to pan and zest in lemon. Bring to a boil and simmer for about 8-10 minutes, until slightly reduced. Stir through spinach, until wilted. Season to taste with salt and pepper.

Pat salmon dry and remove any remaining bones. Season with salt and pepper.

Remove potatoes from oven, crush with a fork and drizzle over olive oil. Add salmon to tray and cook for a further 8-10 minutes, until potatoes are golden and crispy and salmon is cooked to your liking. Slice lemon into wedges.

Spread tomato sauce on plates and top with potatoes and salmon. Dollop with zhoug sauce and serve lemon wedges on the side.
