Feed The Team Tex-Mex Pork & Beans with Cheese & BBQ Sauce

With savoury free range pork mince flavoured with punchy Tex-Mex spices and sweet and tangy BBQ sauce – all finished with extra helpings of cheese, this is sure to be a favourite that goes further! If you’re on a 2-person box, these recipes feed 4; on a 4-person box, they feed 8.


Ingredients

Rice

  • 600g jasmine rice
  • 4 1/4 cup boiling water
  • 2 can corn, drained
  • 100g baby spinach

Pork & Beans

  • 3 carrot, grated
  • 2 can kidney beans, drained & rinsed
  • 1 drizzle of oil
  • 600g free farmed pork mince
  • 2 pack taco 'bout flavour Mexican spices
  • 1 pack tomato passata
  • 100g BBQ sauce
  • 2 Tbsp tomato sauce
  • 3 cup chicken stock
  • 2 Tbsp cornflour
  • 1 Tbsp mustard
  • 1 Tbsp brown sugar
  • 1 tsp salt

To Serve

  • 250g Colby cheese, grated

Steps

  1. Boil a kettle. Boil a pot of water. Combine rice, boiling water measure and a pinch of salt in a pot. Cover with lid and bring to the boil. Drop to lowest heat and cook for 12 mins. Turn heat off, leave lid on and steam for 5 mins.
  2. Drain corn and cook in pot of boiling water for 3 mins, until tender. Drain, rinse under cold water to refresh and drain again. Add corn and spinach to pot with cooked rice and stir to combine.
  3. Grate carrot. Drain and rinse beans. Heat oil in a pot on high. Cook for pork for 6-7 mins, breaking it up as it cooks, until browned. Add carrot and measure of spices to pot and cook for 4-5 mins, until softened.
  4. Add tomato passata, BBQ sauce, tomato sauce, beans, chicken stock, cornflour, mustard, sugar and salt measure to pot. Stir to combine, bring to a boil, then drop heat to medium and simmer for 5-7 mins, until slightly reduced. Season to taste with salt and pepper. Grate cheese.
  5. Spoon rice and corn into bowls and top with pork and beans. Sprinkle over cheese. Feed the team!
