Chicken Chow Mein

Chicken Chow Mein

Keep chicken, noodles and vegetables plain for fussier foodies. Keep veggies raw for the kids, if preferred.


Ingredients

Sauce

  • 60g oyster sauce
  • 1/4 cup soy sauce
  • 1 teaspoon honey
  • 1 tablespoon sesame oil
  • 1 tablespoon sweet chilli sauce (optional)

Chicken and Noodles

  • 550g chicken breasts, diced 2cm
  • 320g dried udon noodles
  • 1 clove garlic, minced
  • 1 teaspoon finely grated ginger
  • 2 carrots, cut into thin matchsticks or grated
  • 1 baby bok choy, end trimmed 1cm and thinly sliced
  • 1 cup frozen peas

Steps

  1. Bring a medium pot of salted water to the boil. Prepare ingredients. In a small bowl, whisk all sauce ingredients until combined. Place chicken in a medium bowl with 1 tablespoon of the sauce, toss and set aside to marinate.
  2. Cook noodles in pot of boiling water for 7-8 minutes, until just tender. Drain, rinse with warm water and return to pot with a drizzle of sesame oil to prevent sticking. Set aside.
  3. Heat a drizzle of oil in a large fry-pan (or wok) on high heat. Cook chicken for about 4 minutes, until browned. Add garlic and ginger, and cook about 1 minute, until fragrant.
  4. Add carrots to pan and cook for 1-2 minutes. Add bok choy and peas and cook a further 1-2 minutes, until bok choy has just wilted and chicken is cooked through.
  5. Add cooked noodles and remaining sauce to pan with chicken and veggies and toss to warm through, about 1 minute.
  6. To serve, divide chicken chow mein between plates.
