Pumpkin, Bacon & Rocket Salad

Cook the whole packet of bacon and enjoy it cold in a weekend salad or brunch meal, if desired. Place tray


Ingredients

Pumpkin, Bacon

  • 300g pumpkin
  • 125g streaky bacon
  • ½ broccoli

Caper Salad

  • ½ sachet balsamic dressing
  • ½ capsicum
  • ½ shallot *
  • 30g feta cheese
  • 1/3 bag spinach
  • 20g capers

Steps

  1. Preheat oven to 220°C. Line an oven tray with baking paper. Dice pumpkin 3cm and toss with a drizzle of oil on prepared tray. Season and roast for about 15 minutes, until almost tender. Slice bacon into 5cm strips and separate slices and cut broccoli into medium florets. Set both aside.
  2. After pumpkin has cooked for 15 minutes, add bacon to tray, in a single layer around pumpkin. Turn oven to high grill and grill for 4 minutes. After 4 minutes, add broccoli to tray and grill for a further 5 minutes, until veggies are tender and bacon is crispy.
  3. Place balsamic dressing in a medium bowl. Thinly slice capsicum and shallot. Add both to bowl with dressing and set aside.
  4. Crumble feta into bowl with capsicum and shallot, and add spinach and capers just before serving. Toss to combine and season to taste.
  5. To serve, divide pumpkin bacon and broccoli between plates and top with caper salad.
