Ingredients
Spiked Wedges
- 800g potatoes, cut into wedges
- 2 pack tik tok trending seasoning
- 1 drizzle of oil
Fish
- 600g frozen fish fillets, defrosted, cut in half
- 2 pack Southern spice blend
- 1 drizzle of oil
Slaw
- 350g slaw
- 100g baby spinach
- 1/2 Tbsp Dijon mustard
- 1/2 Tbsp vinegar
- 1 Tbsp olive oil
BBQ Mayo
- 100g BBQ sauce
- 4 Tbsp mayonnaise

Preheat oven to 230°C (or 210°C fan bake). Cut potatoes into wedges. Toss with oil and measure of Tik Tok Trending Seasoning on 1-2 lined oven trays and spread in a single layer. Season with salt and pepper and roast for 25-30 mins, until tender and golden. Turn once during cooking.

Pat fish dry and remove any remaining scales or bones. Cut any larger fillets in half. Season with salt and pepper. Toss with measure of Southern spice blend in a bowl until evenly coated. Heat oil in a frypan on medium-high. Cook fish for about 2 mins each side, depending on thickness, until just cooked through. Set aside to rest.

Add all slaw ingredients to a bowl with a pinch of salt. Toss until combined.

In a bowl, combine BBQ sauce and mayo. Set aside for serving.

Plate up wedges. Top with fish and serve salad on the side. Dollop with BBQ mayo. Enjoy!
