Sam Whitlock's Winning Rosemary & Sage Sausies with Apple Mashed Potatoes

Add an extra ½-1 tablespoon of mustard to the mash to bring it to another level.


Ingredients

Apple Mashed Potatoes

  • 600g potatoes
  • 1 apple
  • ½ teaspoon salt
  • 1 tablespoon butter
  • 3 tablespoons milk
  • ½-1 tablespoon Dijon mustard (optional)

  • 550g rosemary & sage sausages

Salad

  • 1 tablespoon olive oil
  • 2 teaspoons vinegar (e.g. red wine, white wine or balsamic)
  • ½ cos lettuce
  • 1 tomato
  • ½ telegraph cucumber

Steps

  1. Bring a large pot of salted water to the boil. Preheat BBQ hot plate or grill to medium (if using). Peel potatoes and apple, dice both 2cm. Cook potatoes in pot of boiling water for 6 minutes. Add apple and cook a further 8 minutes or until soft. Drain well and return to pot.
  2. Add all remaining apple mashed potato ingredients and mash until smooth. Keep warm.
  3. Heat a drizzle of oil in a large fry-pan on medium heat, or on BBQ hot plate and cook sausages for about 8 minutes until browned and cooked through.
  4. In a medium bowl, mix oil and vinegar. Roughly chop lettuce; cut tomatoes into 1cm wedges; cut cucumber in half lengthways then thinly slice. Add to bowl with dressing and toss to combine. Season.
  5. To serve, divide apple mashed potatoes, sausages and salad between plates.
