Lamb Burgers

Leave off tomato relish and use tomato sauce for fussy eaters. Kids can build and tailor their own burgers however they like.
Ingredients
Lamb Burgers
- ½ carrot
- 550g lamb mince
- ¼ cup panko breadcrumbs
- 1 tablespoon lamb spice mix
- ½ teaspoon of salt
Salad
- ½ cos lettuce
- 1 tomato
- ½ carrot
- ½ block cheese
To Serve
- 6 burger buns
- Tomato relish (optional)
- 1-3 tablespoons tomato sauce (optional, kids)
- ¼ cup mayonnaise

Preheat oven to 180°C. Line an oven tray with baking paper. Preheat BBQ hot plate or grill to medium-high (if using). Grate carrot and place in a medium bowl, along with lamb mince, breadcrumbs, lamb spice mix and salt. Mix well to combine. Divide lamb mix into 6 even amounts (approximately 1/3 cup each) and roll into balls. Flatten into 1cm-thick patties and set aside.

Tear lettuce leaves into smaller pieces; thinly slice tomato; grate second measure of carrot; slice cheese. Set all aside on a platter.

Heat a drizzle of oil in a large fry-pan on mediumhigh heat. Cook patties, in two batches, for 2 -3 minutes each side, until golden and cooked through. Wipe out pan between batches and add another drizzle of oil as needed. Alternatively, cook on BBQ.

While patties are cooking, slice buns in half horizontally and place, cut-side-up, on prepared tray. Warm in oven for 4-5 minutes, until lightly toasted.

To serve, place everything in the middle of the table for everyone to help themselves. Place a patty onto the base of each bun and top with sliced cheese, a dollop of tomato relish or tomato sauce (if desired), lettuce, tomato and carrot. Spread mayo on top half of bun. Serve remaining salad on the side.
