Peanut Pork Noodles with Special Stir-Fry Sauce

A little positive mystery might entice your little foodies tonight. Emphasise the special sauce and it’s “secret ingredient” (peanut butter). They will gobble it down, while trying to guess the secret!


Ingredients

Pork and Vegetables

  • 450g pork mince
  • 1 clove garlic, minced
  • 1-1½ teaspoons finely grated ginger
  • ½ red onion, thinly sliced
  • 1 capsicum, thinly sliced
  • ¼ green cabbage, thinly sliced until you have about 3 cups worth
  • 1 carrot, grated

Noodles

  • 300g dried rice stick noodles

Stir-Fry Sauce

  • 1½ tablespoons soy sauce
  • ½-1 tablespoon mild sweet chilli sauce
  • 60g peanut butter
  • 1 cup water or chicken stock

To Serve

  • 40g chopped peanuts
  • Mild sweet chilli sauce (optional)

Steps

  1. Bring a medium pot (with a lid) of salted water to the boil. Prepare veggies. Heat a drizzle of oil in a medium fry-pan on high heat. Cook pork, garlic and ginger with a pinch of salt for 3-4 minutes, until browned and just cooked through. Break up mince with a wooden spoon as it cooks. Remove from pan and set aside in a medium bowl, covered, to keep warm. Reserve pan.
  2. While pork is cooking, place noodles in pot of boiling water. Stir well to separate strands, cover and turn off heat. Leave for 6-7 minutes until tender, drain well. Return to pot with a drizzle of oil to prevent sticking. Use kitchen scissors to cut noodles in a few places to make them easier to eat.
  3. While noodles cook, heat a drizzle of oil in reserved pan on high heat. Stir-fry onion and capsicum for 2 minutes, until tender. Add cabbage and carrot and cook a further 1 minute, until starting to soften. Set aside in bowl with pork and reserve pan. In a small bowl, whisk all stir-fry sauce ingredients together until smooth.
  4. Heat reserved pan on medium heat, add stir-fry sauce and noodles and cook for about 1 minute to coat noodles in sauce. Return pork and vegetables to pan and toss for 1-2 minutes, until warmed through. Season to taste.
  5. To serve, divide peanut pork noodles between bowls and sprinkle over peanuts. Serve with extra sweet chilli sauce, if desired.
