Build Your Own Chicken Poke Bowl with Sesame Mayo & Avocado

This fun and colourful poke bowl is full of crispy veggies, creamy avocado and free range chicken. Honey soy ginger sauce lends a complex umami flavour whilst sesame mayo brings the perfect creaminess to finish off the dish.


Ingredients

Rice

  • 300g jasmine rice
  • 2 1/4 cup boiling water
  • 1 Tbsp sesame oil

Veggies

  • 1 broccoli, cut into small florets
  • 1 avocado, sliced
  • 1 telegraph cucumber, cut in half & thinly sliced on an angle
  • 3 carrot, cut into matchsticks

Chicken

  • 1 garlic clove, minced
  • 600g free range chicken breast, diced 2cm
  • 1 drizzle of oil
  • 100g honey soy ginger sauce

To Serve

  • 4 Tbsp sesame mayo
  • 1 pinch of chilli flakes

Steps

  1. Bring a kettle to the boil. Bring a pot of salted water to the boil.
  2. Combine rice, boiling water measure and a pinch of salt in a second pot and bring to the boil with the lid on. Once boiling, reduce to lowest heat to cook for 12 minutes. Turn off heat and steam, covered, for 5 more minutes. Do not lift lid during cooking.
  3. Cut broccoli into small florets. Cook broccoli in pot of boiling water for 2 minutes, until bright green and tender. Drain well and return to pot. Slice avocado. Cut cucumber in half and thinly slice on an angle. Cut carrot into matchsticks.
  4. Mince garlic. Pat chicken dry and dice 2cm.
  5. Heat oil in a frypan on high heat. Cook chicken for about 5 minutes, turning occasionally, until browned. Add honey sauce ginger sauce and garlic and cook for a further 2 minutes, until chicken is cooked through. Season to taste with salt and pepper.
  6. Arrange everything on a tray or in bowls on the table. Build your own bowls with rice, veggies, chicken and Japanese mayo. Add chilli flakes to your liking.
