Sesame Beef Pave Steaks

With pumpkin and ginger mash


Ingredients

PUMPKIN AND GINGER MASH

  • 1 butternut pumpkin, peeled and diced 2cm until you have 3 cups worth
  • 1 teaspoon oil
  • 2 tablespoons water
  • ¼-½ teaspoon finely grated ginger

BROCCOLI SALAD

  • 2 carrots
  • ¼-½ red onion *
  • 1 clove garlic
  • ½ telegraph cucumber *
  • 1/2 bag radishes *
  • 1 broccoli
  • 1½ cups frozen peas *
  • 1 tablespoon soy sauce
  • 2 teaspoons honey
  • 1 teaspoon sesame oil
  • 1 tablespoon rice wine vinegar
  • 2 teaspoons sesame seeds

SESAME BEEF PAVE STEAKS

  • 1 teaspoon oil
  • 550g lean beef pave steaks (at room temperature)
  • 1 clove garlic, minced
  • 2 teaspoons sesame seeds
  • 1 teaspoon soy sauce

TO SERVE

  • 50g miso drizzle

Steps

  1. Preheat oven to 210ºC. Line an oven tray with baking paper. Bring a medium pot of salted water to the boil. Preheat BBQ grill or hot plate to medium (if using). Prepare pumpkin, garlic and ginger
  2. Toss pumpkin, oil and water on prepared tray and season. Bake for about 25 minutes, until tender. Place in a medium bowl, add ginger and mash until smooth. Season to taste and set aside, covered, to keep warm.
  3. While pumpkin cooks, prepare broccoli salad. Grate carrots; very thinly slice onion; mince garlic; cut cucumber in half lengthways and thinly slice; cut radishes in half and thinly slice. Place all in a large bowl and set aside. Cut broccoli into small florets and dice stalk 1cm.
  4. Cook broccoli in pot of boiling water for about 2 minutes. Add peas and cook for a further 1-2 minutes, until bright green and tender. Drain, rinse under cold water and leave to drain well.
  5. Heat oil in a large fry-pan on medium heat. Pat beef dry and toss with garlic, sesame seeds and soy sauce. Cook beef for 3-4 minutes each side for medium (depending on thickness), or until cooked to your liking. Alternatively, cook on BBQ. Set aside, covered, to rest before slicing against the grain, reserving any resting juices.
  6. Add all remaining broccoli salad ingredients to bowl with salad veggies, toss well to combine and season to taste.
  7. To serve, share broccoli salad between plates and spoon pumpkin and ginger mash beside salad. Top with sesame beef and drizzle over resting juices (if desired) and miso drizzle.
