
Creamy Lentil and Mushroom Stroganoff with Spaghetti and Crunchy Salad

Ingredients
Stroganoff
- ½ brown onion
- 1 punnet white button mushrooms
- 1 clove garlic
- ½ can lentils
- ¼ tsp salt
- 35g tomato paste
- 1 Tbsp Stroganoff herbs
- ¼ cup red wine/stock (optional)
- 1 cup vegetable stock
- 150ml cream
- 1 tsp Worcestershire sauce
Spaghetti
- 200g spaghetti
Salad
- 1 baby cos lettuce
- ¼ telegraph cucumber
- 1 tomato
- 50g herb vinaigrette
To Serve
- 1-2 Tbsp dill
- ¼ cup sour cream (optional)
- 50g feta cheese (optional)
Steps

Bring a large pot of salted water to the boil. Thinly slice onion; slice mushrooms 0.5cm; mince garlic; drain and rinse lentils.

Heat a drizzle of oil in a large fry-pan on high heat and cook onion and mushrooms for about 5 minutes, until browned, adding extra oil if needed. Add garlic, salt, tomato paste and Stroganoff herbs and cook a further 1-2 minutes, stirring often until fragrant.

Add wine/first measure of stock and reduce for about 1 minute. Reduce heat to medium, add lentils and second measure of stock. Bring to a simmer and cook for about 5 minutes, until liquid has almost reduced.

Cook pasta in pot of boiling water for about 7 minutes, until tender. Drain well and toss with a little olive oil to avoid sticking. Once mushrooms have simmered, add cream and reduce heat to low-medium. Simmer for about 5 minutes until thick and creamy. Stir through Worcestershire sauce and season to taste.

While cream is simmering; roughly chop lettuce; thinly slice cucumber; dice tomato 1cm and add to a large bowl. Toss with herb vinaigrette and season to taste. Roughly chop dill and crumble feta.

To serve, divide spaghetti between bowls and top with plenty of creamy lentil and mushroom stroganoff. Top with sour cream and feta (if using) and sprinkle with dill. Serve salad on the side.
