Italian Lamb Bunnuce Burger with Parmesan Kumara Bites

Alternatively, cook lamb patties on BBQ hot plate for about 2-3 minutes each side, until cooked through.


Ingredients

Kumara

  • 400g kumara
  • 35g Parmesan cheese

Lamb

  • ¼ brown onion *
  • 1 clove garlic
  • 300g lamb mince
  • 1 Tbsp Italian herbs
  • ½ egg
  • ¼ cup panko breadcrumbs
  • ¼ tsp salt

Vegetables

  • 1 eggplant
  • ¼ brown onion
  • 1 tomato
  • ½ iceberg lettuce

Lemon Parsley Mayo

  • 1-2 Tbsp chopped parsley
  • 2 Tbsp mayonnaise
  • Zest and juice of ½ lemon

Steps

  1. Preheat oven to 230°C. Line an oven tray with baking paper. Dice kumara 1.5cm and toss on prepared tray with a drizzle of oil and season well. Bake for about 18-20 minutes, until golden and tender. When 10 minutes cook time remains, turn kumara over, grate over Parmesan and return to oven.
  2. Finely dice first measure of onion and mince garlic, then combine all Italian lamb ingredients in a bowl. Mix well to combine, scoop out 1/3 cup mixture and shape into patties, about 1cm-thick. Heat a drizzle of oil in a large fry-pan on high heat.
  3. Cook lamb patties for 2-3 minutes each side, until cooked through. Set aside, covered to keep warm. Reserve pan. While lamb cooks, cut eggplant in half lengthways, then slice into 0.5cm, thinly slice second measure of onion.
  4. When lamb has cooked, wipe pan clean and return to medium-high heat with a drizzle of oil. Cook onion and eggplant for about 4 minutes, stirring often, until tender. Season to taste.
  5. Thinly slice tomato and separate lettuce leaves. Mix parsley, mayo and lemon in a small bowl.
  6. To serve, divide kumara between plates. Place lamb patties and remaining vegetables between lettuce leaves to form a bunnace. Drizzle with lemon parsley mayo.
