Surprise Chicken Bites with Roast Potato Salad

Ingredients
Salad
- 600g potatoes
- 1 broccoli
- 1 cup frozen peas
- 2 tsp GF wholegrain mustard
- 3 Tbsp GF mayonnaise
- 100g baby spinach
Chicken Bites
- 1 carrot
- 450g chicken and bacon mince
- ¼ cup panko breadcrumbs
- 50g cheese
- ¼ cup GF flour
Steps

Preheat oven to 220°C. Bring a medium pot of salted water to the boil. Line two oven trays with baking paper. Dice potatoes 2cm and toss on first prepared tray with a drizzle of oil and season. Roast for about 25 minutes, until tender. Turn once during cooking.
