Beef and Pork Meatballs with tomato bulgur

Scrunch the baking paper into a ball and rinse it under water before using to prevent it from burning.


Ingredients

TOMATO BULGUR

  • Spray oil
  • ½ red onion, thinly sliced
  • ¼ teaspoon salt
  • 1 teaspoon garlic paste
  • 1 carrot, grated
  • 1 cup tomato passata
  • 1 cup stock
  • 50g bulgur wheat
  • ½ broccoli, finely chopped
  • 1 courgette, cut in half and thinly sliced

BEEF AND PORK MEATBALLS

  • 250g lean ground beef and pork mince
  • ½ whisked egg
  • ¼ teaspoon salt
  • 1 packet meatball spice
  • Spray oil

TO SERVE

  • 1 tablespoon chopped walnuts
  • 2-3 tablespoons basil leaves
  • 30g feta cheese
  • ¼ punnet cherry tomatoes

Steps

  1. Preheat oven grill to high. Line an oven tray with baking paper. Prepare tomato bulgur ingredients.
  2. To serve, spoon tomato bulgur into bowls. Place beef and pork meatballs on top. Sprinkle over tomatoes, basil, walnuts and feta.
  3. Heat a medium, dry pot on medium heat. Spray pot with oil and cook onion and salt for about 3 minutes, stirring often, until starting to soften.
  4. Add garlic and carrot and continue to cook for 1-2 minutes, stirring, until starting to soften. Stir through passata, stock and bulgur. Bring to a simmer and reduce heat to low.
  5. Cook tomato bulgur for 12-14 minutes, stirring occasionally, until bulgur is cooked and sauce has thickened (if sauce gets too thick before bulgur is cooked, add a little extra water).
  6. Add broccoli and courgette and cook a further 2-3 minutes. Season to taste and set aside, covered, to keep warm.
  7. While bulgur cooks, mix together beef and pork, egg, salt and meatball spice in a medium bowl.
  8. Using damp hands, shape mixture into golf ballsized balls. Spray with oil and place on prepared tray. Grill meatballs (on middle-upper oven rack) for about 8 minutes, then remove tray from oven and place walnuts on one side of tray.
  9. Continue to grill meatballs and walnuts for about 1 minute, or until walnuts are toasted and meatballs are cooked. Watch walnuts to ensure they don’t burn.
  10. While meatballs grill, roughly tear basil and crumble feta. Cut tomatoes in half and season.
