Japanese Chicken Tostada with Wasabi Mayonnaise

Marinate your chicken the night before for a richer flavour. If the marinade starts to burn when cooking, turn heat down slightly.


Ingredients

Chicken

  • 150g chicken thighs
  • ½ Tbsp finely grated ginger
  • 1 Tbsp soy sauce
  • ½ Tbsp sesame oil
  • ½ tsp honey

Tostada

  • ½ Lebanese cucumber
  • ½ capsicum
  • ½ baby bok choy
  • ¼ red onion
  • 1-2 Tbsp Japanese dressing
  • 2 tortilla wraps
  • 1 Tbsp wasabi mayonnaise (optional)
  • 2 Tbsp picked coriander

Steps

  1. Pat chicken dry and slice 1cm. Grate ginger. Toss all chicken ingredients in a medium bowl and set aside to marinate while you prepare the tostada.
  2. Finely dice cucumber, capsicum, white part of bok choy and red onion. Place in a medium bowl with Japanese dressing and set aside. Thinly slice bok choy leaves and set aside.
  3. Heat a drizzle of oil in a medium fry-pan on medium heat. Cook chicken for about 5 minutes, turning to ensure even cooking, until cooked through. Set aside to rest. Wipe pan clean and add another drizzle of oil. Cook wraps for 1-2 minutes each side, until golden and crispy.
  4. Thinly slice chicken and lightly season. Top toasted tortillas with bok choy leaves, chicken, veggies, wasabi mayonnaise (if using) and coriander. Cut into 4 triangles.
  5. To serve, place Japanese chicken tostadas on a plate and serve any remaining veggies and wasabi mayonnaise on the side.
