Easy Pork Sausies with Mash and Homemade Tomato Sauce

Keep the mash, veggies, sausages and sauce separate for those fussy little foodies.


Ingredients

Mash

  • 600g potatoes
  • 1 Tbsp butter
  • ¼ cup milk
  • ½ tsp salt

Veggies

  • 1 carrot
  • 1 cup frozen peas

Tomato Casserole Sauce

  • ½ onion
  • 1 sweet Palermo capsicum
  • 1-2 garlic cloves
  • 1 tsp casserole spices
  • 400g chopped tomatoes
  • ½ tsp salt
  • 1 tsp sugar
  • 1 tsp balsamic vinegar

Sausages

  • 550g pork sausages

Steps

  1. Bring a medium pot of salted water to the boil. Peel and dice potatoes 2cm. Cook potatoes in pot of boiling water until very soft, 12-15 minutes. Drain and mash with butter, milk and salt until smooth. Season to taste with pepper and cover to keep warm.
  2. Cut carrot into 3 x 0.5cm sticks. Finely dice onion and capsicum, and mince garlic. Heat a drizzle of oil in a large fry-pan on medium-high heat. Cook sausages for 6–8 minutes, turning regularly, until browned on all sides and just cooked through. Remove and cover with foil. Reserve pan. Bring a small pot of salted water to the boil.
  3. Return pan to medium heat with a drizzle of oil, if needed. Add onion, capsicum and garlic to pan and cook for 2-3 minutes, until onions are soft and starting to brown. Add casserole spices and cook for about 1 minute, until fragrant.
  4. Add chopped tomatoes, salt, sugar and balsamic vinegar. Bring to a simmer and cook for about 5 minutes until reduced slightly. Add carrot and peas to pot of water and cook for 2-3 minutes, until tender. Drain, drizzle with olive oil and season to taste.
  5. To serve, divide mash between plates and top with pork sausages and a spoonful of tomato casserole sauce. Serve veggies on the side.
