
Bunless Burgers with Beetroot Feta and Caramelised Onions

Wear gloves when grating the beetroot to avoid stained hands.
Ingredients
KUMARA
- 200g kumara
- ½ tsp oil
BUNLESS BEEF BURGERS
- 250g lean ground beef
- 1 egg yolk
- 1 pack burger spices
- ¼ tsp salt
- ¼ tsp oil
BEETROOT FETA
- 100g cooked beetroot
- 2 Tbsp yoghurt
- 30g feta cheese
TO SERVE
- 1 tomato
- 1 baby cos lettuce
- 2 Tbsp caramelised onions

Preheat oven to 220ºC. Line two oven trays with baking paper.

Cut kumara into 1cm rounds and toss with oil on first prepared tray. Season and bake (on middle oven rack) for 22-24 minutes, until tender and golden.

In a medium bowl, combine beef, egg yolk, burger spices and salt.

Using damp hands, shape mixture into 4 evensized 1.5cm-thick patties.

Place patties on second prepared tray and brush with oil. When kumara has 10 minutes cook time remaining, switch oven to high grill and place tray with patties in oven (on rack above kumara).

Grill patties for 8-10 minutes, until golden and cooked through. Set aside to rest.

Grate beetroot into a medium bowl and add yoghurt and feta. Mix to combine and season to taste.

Thinly slice tomato and separate lettuce leaves.

To serve, lay out lettuce leaves and spoon beetroot feta evenly onto leaves. Place a kumara round and a patty in each lettuce leaf and top with tomato and a dollop of caramelised onions. Serve extra kumara on the side.
