Spiced Chicken with Caramelised Onion Potatoes and Feta

If your spice mix starts to burn turn the heat down slightly.


Ingredients

Potatoes

  • 800g baby potatoes
  • 1 courgette
  • 1 tomato
  • 1 red onion
  • 2 Tbsp butter
  • 1 Tbsp brown sugar
  • 1 Tbsp balsamic vinegar

Cucumber and Feta

  • ½ telegraph cucumber
  • 50g feta cheese
  • Juice of ½ lemon

Chicken

  • 600g chicken breasts
  • 1½ Tbsp spiced chicken blend

Steps

  1. Bring a large pot of salted water to the boil. Cut any large potatoes in half and add to pot of boiling water. Cook for about 15 minutes until just tender and drain.
  2. Finely dice cucumber 1cm and crumble feta. Add to a medium bowl with lemon juice, mix to combine and season to taste. Dice courgette and tomato 1cm and thinly slice onion.
  3. Pat chicken dry and cut into steaks. To do this, place your hand flat on top of chicken breast and slice through horizontally to make two thin steaks. Season and toss with spiced chicken blend and a drizzle of oil.
  4. Heat a drizzle of oil in a large fry-pan on mediumhigh heat. Cook chicken for about 3 minutes each side, depending on thickness, or until cooked through. Set aside to rest. Keep pan on a low-medium heat and add a drizzle of oil if needed.
  5. Cook courgette and onion in pan for about 3 minutes, until tender. Add butter, sugar and vinegar to pan and cook for about 1 minute until combined. Remove from heat, add cooked potatoes and diced tomato and stir gently to combine. Season to taste. Thinly slice chicken.
  6. To serve, divide potatoes between bowls, top with chicken and cucumber and feta salad.
