Goma Dare Beef with Broccoli

Make sure your pan is nice and hot before you start stirfrying your veggies!
Ingredients
Rice
- 1 cup jasmine rice
- 1½ cups water
- 250g frozen peas
- ½ tsp GF sesame oil
Dressing
- 1 clove minced garlic
- 2 tsp grated ginger
- 2 tsp GF soy sauce
- 1 Tbsp GF sweet chilli sauce
- 80g goma dare
Stir-Fry
- 1 broccoli
- 1 carrot
- 1 red onion
- 450g beef mince

Combine rice, water and a pinch of salt in a pot and bring to the boil. As soon as it boils, cover with a tight-fitting lid and reduce to lowest heat to cook for 12 minutes. Turn off heat and leave to steam, still covered, for a further 8 minutes. Do not lift lid during cooking.

Mix all dressing ingredients together in a bowl. Cut broccoli into very small florets and roughly dice stalk; cut carrot in half lengthways and thinly slice; thinly slice onion.

Bring a small pot of salted water to the boil. Cook peas in pot of boiling water for 2-3 minutes then drain.

Heat a drizzle of oil in a large fry-pan on high heat. Cook beef mince for 2-3 minutes until browned, breaking up as it cooks. Remove from pan and set aside, covered. Return pan to high heat.

Stir-fry carrot and onion for 2 minutes then add broccoli and cook for a further 2-3 minutes, until veggies are tender. Add dressing and beef mince, toss to combine and season. Fold peas and sesame oil through cooked rice.

To serve, divide rice between plates or bowls and top with goma dare beef stir-fry.
