Halloumi Bites with Maple Roasted Apples and Super Grains

Ingredients
Maple Apples
- 3 golf ball apples
- 2 Tbsp maple syrup
- ¼ tsp salt
- 1 tsp white wine vinegar
Super Grains
- ¾ cup super grain mix
- ¼-½ fennel (optional)
- 2 radishes
- ½ bag baby spinach
- 4 Tbsp mint
- 25g sliced almonds
- 2 tsp Dijon mustard
- 2 tsp white wine vinegar
- ¼ tsp salt
Leeks
- 1-2 Tbsp butter
- 3 baby leeks
- ¾ cup vegetable stock
Halloumi
- 1 block halloumi cheese
To Serve
- 40g balsamic glaze

Preheat oven to 230°C. Bring a small pot of salted water to the boil. Cut apples in half and remove core. Toss in a small bowl with maple syrup, salt and vinegar. Place skin side down in a small baking dish, drizzle with remaining maple mix and roast for about 25 minutes, until softened and glazed. Turn halfway during cooking.

Cook super grains in pot of boiling water for about 15 minutes, until tender. For the leeks, heat a little oil with the butter in a medium fry-pan on medium heat.

Cut leeks into 10cm lengths, add to pan and cook for about 4 minutes, until browned. Add stock and simmer for 3-4 minutes until reduced by ¾. Season to taste. Remove leeks and sauce from pan and set aside separately. Wipe pan clean and reserve.

While leeks cook, thinly slice fennel and radishes and roughly chop spinach and mint. Place all in a large bowl with remaining super grain ingredients. Cut halloumi into 0.5cm slices and season with cracked pepper.

When leeks are cooked, return reserved pan to mediumhigh heat with a drizzle of oil and cook halloumi for 1-2 minutes each side, until browned. When super grains are cooked, toss with veggies in large bowl with a drizzle of olive oil and season to taste.

To serve, spoon super grain mixture onto plates, top with leeks, leek sauce, apples and halloumi. Drizzle with balsamic glaze.
