This easy and super saucy bacon and tomato pasta is ready in a breeze. Simply pan-fry free-farmed bacon before building a simple but delicious tomato sauce. Serve with rigatoni for a crowd pleaser that is ready in just 20 minutes.
Ingredients
Pasta
- 1 pack rigatoni
- 1 drizzle of olive oil
Sauce
- 400g bacon, chopped
- 1 capsicum, thinly sliced
- 1 drizzle of oil
- 50g garlic paste
- 1 1/2 pack Italian spice blend
- 1500g tomato passata
- 150g baby spinach
- 100g grated Parmesan

Boil a pot of salted water. Cook pasta for 8–10 mins, until just tender. Drain and return to pot with olive oil to prevent sticking.

Chop bacon. Heat oil in a frypan on medium-high. Cook bacon for 3-5 mins, until browned. Add garlic paste and measure of spices and cook for 1-2 mins, until fragrant. Add tomato passata to pan and bring to a simmer. Drop heat to medium and simmer for about 5 mins, until thickened. Stir through spinach until wilted. Season to taste with salt and pepper.

Add sauce and Parmesan to pot with pasta and stir to coat.

Divide pasta between bowls. Dig in!
