Satay Turkey Meatballs with Pear and Capsicum Salsa

Ingredients
RICE
- 150g Japanese brown rice
- 1 cup water
MEATBALLS
- 1 carrot, grated
- 1 pack turkey meatball spice
- 500g ground lean turkey
SATAY SAUCE
- 1 brown onion, thinly sliced
- 1 carrot, cut in half and thinly sliced
- 60g lemongrass paste
- 1 Tbsp soy sauce
- 1 cup chicken stock
- 1 tsp honey
- 1 sachet peanut butter
- ½ cup water
- 1 tsp cornflour, mixed with 1 Tbsp cold water
SALSA
- ½ tsp honey
- 1 tsp white wine vinegar
- ½ tsp sesame oil
- 1 pear, diced 1cm
- 1 capsicum, diced 1cm
- ¼-½ telegraph cucumber, diced 1cm
- ½ bunch coriander, chopped
TO SERVE
- 1-2 Tbsp chopped peanuts

Cook rice. In a small pot, combine rice, water and ½ tsp salt and bring to the boil. As soon as it boils, cover with a tight-fitting lid and reduce to lowest heat to cook for 16 minutes. Turn off heat and leave to steam, still covered, for a further 8 minutes. Do not lift lid during cooking.

Prep meatballs. In a medium bowl, combine all meatballs ingredients with ½ tsp salt. Shape into 16-20 golf ball-sized meatballs.

Prep & cook satay sauce. Heat 1 tsp oil in a large fry-pan on medium-high heat. Cook onion, carrot, lemongrass paste and a pinch of salt for 3-4 minutes, until softening. Add all remaining satay sauce ingredients and mix well to combine.

Cook meatballs. Add meatballs to pan with satay sauce and reduce heat to medium. Cook for 8-10 minutes, turning occasionally, until cooked through. Add a splash of water if sauce becomes too thick.

Prepare salsa. In a medium bowl, mix together honey, vinegar and sesame oil. Add remaining salsa ingredients. Toss well to combine and season.

To serve, divide rice between bowls. Top with meatballs and satay sauce. Spoon over salsa and sprinkle with peanuts.
