Beef and Pork Burgers with Beetroot Feta and Kumara Chips

Ingredients

KUMARA

  • 200g kumara, cut into 1cm rounds

BURGERS

  • 250g lean ground beef and pork
  • 1 egg yolk
  • 1 pack burger spice

BEETROOT FETA

  • ½ beetroot, grated
  • 2 Tbsp yoghurt
  • 30g feta cheese

TO SERVE

  • 1 baby cos lettuce, leaves separated
  • 1 tomato, thinly sliced
  • 50g caramelised onions

Steps

  1. Preheat oven to 230ºC.
  2. Prep & cook kumara. Toss kumara with ½ tsp oil on a lined oven tray, season and bake (on middle oven rack) for 15 minutes to begin with.
  3. Prep & cook burgers. In a medium bowl mix beef and pork, egg, burger spice and a pinch of salt together until well combined. With damp hands, divide mix into 4 and shape into 1.5cm thick patties.
  4. Place patties on a second lined oven tray and brush with ½ tsp oil. Once kumara has cooked for 15 minutes, switch oven to high grill, move kumara to a lower oven rack and place with patties on higher oven rack.
  5. Cook patties for 8-10 minutes, until golden brown and cooked through. Remove from oven and rest, covered. Continue to grill kumara for about 1 minute, until golden.
  6. Prep beetroot feta. Place grated beetroot in a medium bowl. Add yoghurt and crumble in feta, mix to combine and season.
  7. Prep garnishes.
  8. To serve, lay out lettuce leaves and spoon beetroot feta onto leaves. Place a kumara round and a patty in each lettuce leaf, top with tomato and caramelised onion. Serve remaining kumara on the side.
