Chicken Nachos with Salsa Fresca

Ingredients

Salsa Fresca

  • 1 tomato
  • ½ telegraph cucumber
  • Zest and juice of 1 lime

Chicken

  • 1 carrot
  • 1 courgette
  • 1 pack chicken and bacon mince
  • 1 pack chipotle sauce (optional, adults)

To Serve

  • 1½ packs corn chips
  • 1 pack guacamole
  • 1 pack ricotta cheese

Steps

  1. Prep salsa fresca Dice tomato and cucumber 1cm and add to a medium bowl along with lime zest and juice, a drizzle of olive oil and a splash of vinegar. Season.
  2. Prep and cook chicken Grate carrot and courgette. Heat a drizzle of oil in a large fry-pan on mediumhigh heat. Cook chicken and bacon mince, carrot and courgette for 5-6 minutes, stirring, until mince is cooked through and veggies are tender. Stir through chipotle sauce and season. Omit chipotle sauce for fussy foodies and drizzle over nachos for adults.
  3. Serve corn chips on a large platter topped with chicken and salsa fresca. Dollop with guacamole and crumble over ricotta.
