Ingredients
Chicken Satay
- 1/4 tsp oil
- 150g diced free range chicken breast
- 1/2 pack peanut butter
- 1/8 tsp red curry paste
- 1/2 tsp soy sauce
- 50ml light coconut milk
Rice
- 1/4 pack precooked brown rice
Salad
- 1/2 Lebanese cucumber, cut in half lengthways & thinly sliced
- 1/2 baby bok choy, thinly sliced
- 1/2 Tbsp Thai chilli dressing

Heat oil in a frypan on medium-high heat. Pat chicken dry and add to pan. Cook chicken for about 6 minutes, until golden.

While chicken cooks, combine peanut butter, curry paste, soy and coconut milk in a bowl. When chicken cook time has finished, reduce heat to medium, add sauce to pan and cook for about 2 minutes, until chicken is cooked through and sauce has thickened. Season to taste.

Tear top from rice and microwave on high for about 2-3 minutes, until hot.

Cut cucumber in half lengthways and thinly slice. Thinly slice baby bok choy. Toss both in a bowl with dressing.

Top rice with chicken and salad.
