15-Minute Peanut Chicken Satay with Brown Rice & Crunchy Bok Choy Slaw

Ingredients

Chicken Satay

  • 1/4 tsp oil
  • 150g diced free range chicken breast
  • 1/2 pack peanut butter
  • 1/8 tsp red curry paste
  • 1/2 tsp soy sauce
  • 50ml light coconut milk

Rice

  • 1/4 pack precooked brown rice

Salad

  • 1/2 Lebanese cucumber, cut in half lengthways & thinly sliced
  • 1/2 baby bok choy, thinly sliced
  • 1/2 Tbsp Thai chilli dressing

Steps

  1. Heat oil in a frypan on medium-high heat. Pat chicken dry and add to pan. Cook chicken for about 6 minutes, until golden.
  2. While chicken cooks, combine peanut butter, curry paste, soy and coconut milk in a bowl. When chicken cook time has finished, reduce heat to medium, add sauce to pan and cook for about 2 minutes, until chicken is cooked through and sauce has thickened. Season to taste.
  3. Tear top from rice and microwave on high for about 2-3 minutes, until hot.
  4. Cut cucumber in half lengthways and thinly slice. Thinly slice baby bok choy. Toss both in a bowl with dressing.
  5. Top rice with chicken and salad.
