
Pulled Beef Burrito Bowls with Sour Cream

Ingredients
Rice
- 2 cups jasmine rice
- 3 cups water
Beef
- 1 brown onion
- 1 carrot
- 1 pack burrito spice mix
- 400g can chopped tomatoes
- 1 cup water
- 500g pulled beef
- 1 tsp red wine vinegar
- 1 tsp brown sugar
Sour Cream
- 125g sour cream
- ½ Tbsp mild sweet chilli sauce (optional)
To Serve
- 1 cos lettuce
- 1 tomato
- 1 block finely grated Parmesan cheese

Cook rice Combine rice, water and a pinch of salt in a pot and bring to the boil. Once boiling, cover with a lid and reduce to lowest heat to cook for 12 minutes. Turn off heat and steam, still covered, for 8 more minutes. Do not lift lid during cooking.

Cook beef Finely dice onion and grate carrot. Heat a drizzle of oil in a large fry-pan on medium-high heat. Cook onion and carrot for 3-4 minutes until softened. Add burrito spice mix and cook for 1 minute until fragrant.

Add canned tomatoes, water, pulled beef, vinegar and sugar. Bring to a simmer and cook for 4-5 minutes, breaking up beef, until meat is heated through and sauce has thickened. Season.

To finish In a small bowl, mix sour cream with sweet chilli sauce. Thinly slice lettuce and dice tomato.

Serve rice topped with beef, lettuce, tomato, cheese and a dollop of sour cream.
