Steps

  1. Prep pilau Finely dice onion; grate carrots; dice tomatoes 1cm; roughly chop spinach.
  2. Cook pilau Heat a large drizzle of oil in a large pot (with a lid) on medium heat. Cook onion, carrots, garlic and 1 tsp salt for 3-4 minutes, until golden. Stir through rice to coat in oil. Cook for about 1 minute, until rice is starting to look translucent.
  3. Stir in tomatoes, spiced pilau mix and water. Bring to the boil, cover with a lid and reduce to lowest heat to simmer for 16 minutes. Remove from heat and steam, covered, for 8 more minutes. Do not lift lid at any time during cooking.

  5. Finish pilau Stir spinach through cooked rice, cover and leave for 1-2 minutes to wilt. Season to taste.
  6. Serve pilau into bowls, then top with malai kofta, sauce, coriander and almonds.
